We do a lot of RVing and camping and I am always on the look out for cocktails that can be made ahead and enjoyed on the go. After falling in love with mojitos, I knew I needed to find a way to make these easier to bring along with us...hope you enjoy! Ingredients:
1 cup mint leaf |
1 (12 ounce) can limeade |
3 cups water |
2 limes |
1/2 cup sugar |
12 ounces bacardi rum |
club soda |
Directions:
1. Place sugar and 1 cup water in saucepan, bring to a boil and stir until sugar is dissolved. Remove from heat and cool. 2. Place mint leaves in a bowl with the juice of 1 lime and a sprinkling of sugar and using a muddler or the end of a wooden spoon/rolling pin/etc mash the leaves up until they are all mushed up. 3. Combine the sugar syrup, limeade, remaining water, mashed mint leaves/lime juice, the juice form the other lime and the rum in large bowl. Cut up the limes and toss into the mixture. 4. Pour the mixture into a resealable gallon size freezer bag and allow to freeze. 5. When ready to serve use a ratio of 1:1 of slush and club soda. You can add ice cubes to help it stay cool - 6. **Use the limeade can to measure out the rum**. |
