Great to have in the freezer when the urge for cole slaw hits! Prep time includes standing time. Ingredients:
1 head cabbage, shredded about 10 cups |
2 carrots, shredded |
1 green pepper, chopped fine |
1 teaspoon salt |
1 cup vinegar |
1 1/2 cups sugar |
1 teaspoon celery seed |
1 teaspoon mustard seeds |
Directions:
1. In large bowl, combine veggies with salt. 2. Let stand 1 hour. 3. Place remaining ingredients in pan and boil for 1 minute. 4. Cool. 5. Drain veggies and add to vinegar mixture. 6. Stir gently. 7. Ladle into freezer containers or bags. 8. Freeze. 9. Defrost and served chilled. |
