Ingredients:
2 1/2 teaspoon(s) baking soda |
1 cup(s) boiling water |
2 cup(s) buttermilk |
1/2 cup(s) egg substitute |
1/4 cup(s) molasses |
1 cup(s) raisins |
3 cup(s) shreds of wheat bran cereal |
1 1/2 tablespoon(s) sugar |
vegetable cooking spray |
1/2 cup(s) vegetable oil |
2 1/4 cup(s) whole wheat flour |
Directions:
1. Combine first four ingredients and let stand 10 min. til cereal is moist. Combine molasses, egg substitute, and buttermilk and add to cereal mixture. Combine flour, soda, and sugar and add to cereal mixture, stirring just until dry ingredients are moist. Cover batter and let stand at room temperature 15 min. Spoon into muffin pans coated with cooking spray, filling 2/3 full. Bake at 400 degrees 18-20 min. 2. Yield: 2 dozen |
