This is a recipe that I got from Kraft Food & Family magazine. It is ridiculously easy and everyone I have made it for goes nuts over it. It literally took me 5 minutes to put together for baking. A snap!
Ingredients:
1 refrigerated ready-to-use pie crust (1/2 of 15-oz. pkg.)
4 oz. (1/2 of 8 oz. pkg.) cream cheese, softened
3 cups sliced plums, (about 4 medium-sized plums) red or black
1/4 cup granulated sugar
2 tbsp. flour
1 tsp. cinnamon sugar (1/4 tsp. cinnamon and 3/4 tsp. granulated sugar)
1 cup thawed cool whip-style whipped topping
Directions:
1. Preheat oven to 450 degrees F. Place pie crust in greased 10-inch pie plate. Carefully spread cream cheese in 6-inch circle in center of crust (I like to toss it in the middle and flatten out with a spatula); set aside.
2. Toss plums in a ziploc bag with sugar and flour; spoon over cream cheese. Gently fold edge of crust about 2 inches over plums, leaving center of plums uncovered. Sprinkle evenly with cinnamon sugar.
3. Bake 25 min. or until crust is golden brown and fruit juices are bubbly. Cool slightly and cut into slices; top with whipped topping.
4. HINT: you could use any kind of fruit you'd like...peaches, apples, etc.
