2nd place winner submitted by Connie Streck. Diabetic Exchanges: 2 vegetable, 1 meat, 1 starch. I found this recipe in The Evening Times Holiday Cookbook newspaper. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
8 ounces healthy choice 97% frankfurters, diced |
3/4 cup chopped onion |
1/2 cup chopped celery |
1 cup hunts tomato sauce (8oz can) |
2 cups cut carrots, rinsed and drained (16oz can) |
1 cup frozen peas, thawed |
1 1/2 cups diced cooked potatoes (8oz) |
1 teaspoon dried parsley flakes |
Directions:
1. In large skillet sprayed with butter flavored spray, saute frankfurters, onion and celery 8-10 minutes or lightly browned. 2. Stir in tomato sauce, carrots, peas, potatoes and parsley flakes. Bring mixture to a boil. Lower heat and simmer 10 minutes or until vegetables are tender, stirring occasionally. |
