I like this recipe because it's so simple to make. It's from Better Homes and Gardens Low-Cost Cooking. Ingredients:
4 medium potatoes, cooked, peeled and sliced |
4 -5 frankfurters, sliced |
1/4 onion, finely chopped |
1 tablespoon butter |
1 tablespoon flour |
1/2 teaspoon salt |
2/3 cup milk |
3/4 cup cheddar cheese, shredded |
1 tablespoon parsley |
2 teaspoons prepared mustard |
Directions:
1. In saucepan cook onion in butter till tender but not brown. 2. Blend in flour and salt. Add milk all at once; cook and stir over medium heat till thickened and bubbly. 3. Add cheese, stirring to melt. 4. Stir in parsley and mustard. 5. Fold in potatoes and Frankfurters. 6. Place in a 1 quart casserole. 7. Cover and bake at 350 degrees for about 35 minutes or till heated through. 8. Prep time does not include cooking and cooling of the potatoes. |
