Fragrant Chicken and Squash Soup |

This is a suprisingly filling soup with lean protein and fresh herbs and vegetables. Good for body and mind :-) Light, yet full of warmth and fragrant attitude! Ingredients:
1 chicken breast |
200 g butternut squash, cut into chunks |
2 stalks lemongrass, bruised |
4 slices galangal (or ginger) |
1 shallot, thinly sliced |
1 spring onion, cut in 1 cm pieces |
1 red chili, finely chopped |
500 ml chicken stock |
Directions:
1. First poach the chicken breast for 20 minutes in the stock, this will make the stock more flavoursome. 2. Take it out and leave to rest. 3. Then add the squash and simmer quietly for about 10 minutes. Once the chicken is cool enough to handle cut it into bitesize chunks and return to the soup. 4. Now add the Lemongrass, shallot, galangal and spring onion and cook for about 3 minutes more. 5. Just before serving add the chopped chilli and finally sprinkle with the coriander. 6. Bon apetit! |
