Fragrant Banana-Orange Speltmeal |

This is my variation on Banana Orange Oatmeal (Porridge). Hope you can find spelt flakes! They're generally available at a good bulk store and have a characteristic flavor that makes this breakfast different and yummy. Ingredients:
3/4 cup spelt, flakes |
1 cup water |
1 cup orange juice (good quality with lots of pulp is my choice!) |
1 large banana, sliced in half-moons |
1/2-1 teaspoon cinnamon |
1/8-1/4 teaspoon nutmeg |
Directions:
1. Combine the spelt and water in your cooking pot and let soak to soften for an hour or overnight (not totally necessary, but like with oats, the porridge will be creamier). 2. Add the orange juice and bring to a boil. Add the banana, stir it in and lower to a gentler heat. Cook till desired thickness is achieved. 3. Stir in the spices, remove from the heat and let sit 3-5 minutes, partially covered, to let it cool and let the banana chunks melt into it more. You'll see! Divide into two bowls and enjoy. |
