Fragran Meatball Stew Madiera |

An easy but fragrant and sophisticated stew made with commercial meatballs. Use the chipotles to make it quite spicy, or forego them for the kids. Ingredients:
2 lbs. your favorite commercial meatballs (trader joe’s makes a good product). |
1 large onion, chopped |
6 stalks celery, chopped |
1/2 lb. baby carrots |
1 bunch fresh basil, chopped |
2 t. dried oregano |
1 t. crushed garlic |
1 28 oz can tomatoes, drained, coarsely chopped |
32 oz. chicken broth |
1 12 oz can condescend beef broth, undiluted |
1 c. sweet madeira wine |
3-4 (or to taste) canned chipotle peppers in adobo sauce, minced |
2 t. sugar or splenda |
salt to taste |
Directions:
1. Combine all ingredients in a large slow cooker. If there is too much liquid, remove some of the broth. Cook on low for 6 hours or until broth thickens and flavors meld. Or, cook for 1 hour on high, and 4 hours on low. |
