Fragran Meatball Stew Madiera

An easy but fragrant and sophisticated stew made with commercial meatballs. Use the chipotles to make it quite spicy, or forego them for the kids.
Ingredients:
2 lbs. your favorite commercial meatballs (trader joe’s makes a good product).
1 large onion, chopped
6 stalks celery, chopped
1/2 lb. baby carrots
1 bunch fresh basil, chopped
2 t. dried oregano
1 t. crushed garlic
1 28 oz can tomatoes, drained, coarsely chopped
32 oz. chicken broth
1 12 oz can condescend beef broth, undiluted
1 c. sweet madeira wine
3-4 (or to taste) canned chipotle peppers in adobo sauce, minced
2 t. sugar or splenda
salt to taste
Directions:
1. Combine all ingredients in a large slow cooker. If there is too much liquid, remove some of the broth. Cook on low for 6 hours or until broth thickens and flavors meld. Or, cook for 1 hour on high, and 4 hours on low.
