FOUR PEPPER SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Haddox Estate in Austin, Texas in 1992.
Ingredients:
14-1/2 ounces italian plum tomatoes drained
1 medium red onion thinly sliced
1/2 cup coarsely chopped celery
4 ounce can green chilies drained
1/3 cup chopped red bell pepper
1/3 cup chopped yellow bell pepper
1/3 cup chopped green bell pepper
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon mustard seeds
1 teaspoon ground coriander
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 cup chopped fresh cilantro
Directions:
1. Combine all ingredients except cilantro in a food processor then finely chop using on/off pulses.
2. Transfer to bowl then cover and chill at least 4 hours then mix cilantro into salsa and serve.
