Four-Ingredient Peanut Butter Cookies |

My mother-in-law gave me this recipe. They do crumble a little bit when right out of the oven, but they are just so easy to make- I always have the ingredients on hand. Ingredients:
1 cup peanut butter |
1 egg |
3/4 cup sugar (splenda may be substituted) |
1 teaspoon vanilla |
1/2 cup chocolate chips (optional) or 1/2 cup butterscotch chips (optional) |
Directions:
1. Preheat oven to 350. 2. Mix peanut butter, egg, sugar, and vanilla in a large bowl with a hand mixer until well combined. Stir in chocolate chips or butterscotch chips. 3. Spoon tablespoon-sized balls of dough onto an ungreased cookie sheet. Do not flatten cookies. Bake for 10 minutes at 350. Transfer to cooling rack. |
