I never cared for bean salad until I made this one! Wonderful flavor, easy to make and sooo healthy. Healthier still if you substiutute a scant 1/2 C Splenda for the sugar in the marinade. Enjoy! Ingredients:
1 can (15 to 16 oz.) cut green beans |
1 can (15 to 16 oz.) cut wax beans |
1 can ( 15 to 16 oz.) kidney beans |
1 can (8 3/4 oz.) garbanzo beans ( i substitute butter beans) |
1 c thinly sliced purple onion rings, cut in half |
1 small green bell pepper, finely chopped |
2 t chopped fresh parsley |
1/2 c sugar (or a very scant 1/2 cup of splenda) |
2/3 c vinegar |
1/3 c oil |
1/2/ t salt |
1/2 t pepper |
2 t bacon bits |
Directions:
1. Mix drained and rinsed beans, onion,bell pepper and parsley in non-metal bowl. 2. Mix remaining ingredients except bacon bits in saucepan. 3. Heat to boiling, stirring occasionally. Pour over bean mixture; toss. 4. Cover and refrigerate 3 hours, no longer than 24 hours, stirring occasionally. 5. Drain 6. Just before serving, sprinkle with bacon bits. 7. Make the night before…perfect. |
