Broccolli, Mushrooms, and Shallots in a white wine/goat cheese sauce over rice. Ingredients:
2 cups chicken broth |
2 cups cooking wine |
5 tbs flour |
2 tbs butter |
2 cups broccoli, chopped |
2 tbs olive oil |
1/2 cup cashews |
2 cups mushrooms, pieces |
150 g shallots |
4 cloves garlic |
2 oz goat cheese |
2 cups jasmine rice, uncooked |
Directions:
1. Cook jasmine rice in rice cooker. 2. Add wine, goat cheese, flour, and broth to a pan, heat on low. 3. Saute oil, butter, onions, garlic. 4. Once onions are transparent, add mushrooms and cashews, cook until brown - add broccoli for the last few minutes. 5. Add Flour mixture to veggies, let simmer til thickened... cook until broccoli is tender (to taste) and has absorbed the wine/cheese flavor. 6. Mix in rice from cooker into sauce, the enjoy :) |
