Fresh salad with a twist of a sweet and sour taste and many fruity ingredients Ingredients:
200 gr. red forest fruits (red currants, raspberries, blueberries) |
seeds of a pomegranate |
40 gr. walnuts |
40 gr. pinenuts |
1 tangerine in slices |
1 bunch green salad |
1 bunch red salad or radichio |
1/8 tsp pepper |
2 spring onions chopped |
100 gr. chicken breast boiled and cut in small pieces |
1 tbs chives chopped |
for the dressing |
juice of 2 tangerines |
3 tbs olive oil |
1 tsp mustard spicy |
Directions:
1. Break the salad leaves by hand and put them in a large deep bowl. 2. Top with the chicken pieces. 3. Add the pinenuts, the pomegranate seeds and the red fruits. 4. Garnish with the tangerine slices, spring onions and walnuts. 5. In another bowl mix the olive oil, tangerine juice and mustard until you get a smooth liquid. 6. Pour over the salad and sprinkle the chives on top. |
