Yet another Egyptian Marie Henein recipe. Serves 4. This is a way of preparing fava beans, which are commonly eaten as a breakfast food in Egypt. The ingredients tend to be common for the dish but may be varied in their quantities. Ingredients:
1 (16 ounce) can cooked fava beans |
1 large onion, chopped |
1 large tomato, diced |
1 1/2 tablespoons olive oil |
1 teaspoon cumin powder |
1/4 cup parsley, chopped |
2 fresh squeezed lemons |
salt, pepper, and red chili pepper, to taste |
pita bread (optional) |
Directions:
1. Pour the beans into a pot and bring to a boil. Mix them well and add remaining ingredients. Bring to a boil again, then reduce to medium heat and cook for about 5 minutes. This dish is usually eaten with pita bread. |
