this took 30 min. to make and was delicious my olny suggestion is for a thicker sauce to add a 1/4 teaspoon of corn starch because the sauce did not thicken much on its own Ingredients:
1/4 cup flour |
1 lb flounder |
1 tablespoon olive oil |
2 tablespoons shallot |
1/2 cup white wine |
2 teaspoons dijon mustard |
2 teaspoons butter |
1 cup orange juice |
Directions:
1. put flour in a shallor dish or plate 2. dredge fish in flour and set aside 3. chop shallot and set aside 4. heat oil in a large skillet 5. and place fish in to cook over medium high heat until lightly browned about 3-4 min. per side 6. when fish is done place on a place and cover with a tent of tinfoil 7. in a smaller pan add 1tbsp of olive oil and sautee shallot until it starts browning 8. add white wine to deglaze pan scraping up any brown bits 9. let reduce until wine is almost gone then add mustard and orange juice 10. bring to a boil and then simmer 11. stir until sauce thickens 12. add butter and stir until melted and combined 13. top fish with sauce |
