This is a heavenly dessert. Meringue layers filled with whipped cream, pineapple, and maraschino cherries, and refrigerated for 12 or more hours before serving. Ingredients:
8 egg whites |
2 cups sugar |
1 tablespoon vinegar |
1 teaspoon vanilla |
2 cups heavy cream (to be whipped) |
2 cups crushed pineapple (drained) |
1 cup chopped maraschino cherries |
Directions:
1. Beat egg whites until stiff 2. Add sugar gradually 3. Add vinegar, vanilla 4. Beat until very thick 5. Spoon into 2 greased 9 inch cake pans 6. Bake at 300 degrees for 60-75 minutes 7. Turn heat off 8. Leave in oven 1 hour 9. Cool thoroughly before turning out 10. In large bowl, whip cream until stiff 11. Combine whipped cream, drained pineapple and cherries 12. Place one layer on a cake plate, then spread layer with cream mixture, top with other layer, and completely cover top and sides like icing a cake 13. Refrigerate for 12 or more hours before serving 14. This is heavenly! |
