Foil Wrapped Orange Roughy |

This is nice because it cooks in a packet and then there is less of a mess to clean up. Ingredients:
2 lbs orange roughy, thin slices |
2 tablespoons onions, chopped |
1/4 cup butter, melted |
1 lemon, cut into wedges |
1/2 cup mushroom, chopped |
1/2 teaspoon garlic salt |
1/2 teaspoon pepper |
1 tablespoon fresh parsley, finely chopped |
Directions:
1. Place filets, overlapping, on large piece of foil. Make sure that the piece of foil is large enough to enclose them. 2. Sprinkle evenly with onion, parsley and mushrooms. 3. Season with garlic salt and pepper (to taste). 4. Wrap the foil, crimping the edges to keep in juices. 5. Bake at 400 degrees for 15 minutes. 6. Serve with melted butter and lemon wedges. |
