Foil Wrapped Bbq Potatoes |

These are delicious on the grill. I came up with this on a camping trip and since can't stop making it. Goes great with steak, seafood, hamburgers and hotdogs. Great leftover and served with eggs! Ingredients:
5 lbs peeled washed potatoes(you could use red potatoes washed but skins left on) |
1 large onion diced |
1 red bell pepper diced |
1 green bell pepper diced |
1/4 cup emeril's original spice |
1/4 cup olive oil |
3 cloves crushed garlic |
1 tablespoon fresh pepper |
1/4 teaspoon salt |
1 tablespoon chopped parsley |
1 tablespoon oregano |
Directions:
1. take several sheets of alluminum foil and make a large t-packet out of it using several layers. Spray with Pam. Toss all other ingredients together in a food locked bag or bowl and put onto foil then wrap into a packet. Grill on indirect heat for 1 hour or until potatoes are tender. Can be baked in preheated oven for approximately 1 hour 15 minutes. |
