Ingredients:
4 piece(s) 18 long, heavy duty aluminum foil |
1 1/2 cup(s) baby carrots, chopped |
1/4 teaspoon(s) black pepper |
4 clove(s) garlic, minced |
1 lg. sweet potato, scrubbed, peeled and cubed |
1 med. red onion, peeled and cubed |
2 tablespoon(s) olive oil |
1/2 teaspoon(s) salt |
3 turnips, peeled and cubed |
Directions:
1. preheat oven to 375. 2. place veggies in a bowl. Whisk together olive oil, garlic, salt and pepper. Toss over veggies to coat. 3. Spoon veggie mixture evenly into center of foil pieces. Bring up foil sides. Double fold top and ends to seal each packet. Leaving room for heat circulation inside. Place foil packets in single layer on baking sheet. 4. Bake 50 to 55 minutes. Test done-ness with fork. Cut slits in foil with sharp knife to release steam before opening each packet. |
