Foil-Pack Mustard Haddock over Spinach |

Ingredients:
4 strip(s) 18 long, heavy duty aluminum foil |
1/4 teaspoon(s) black pepper |
1 tablespoon(s) dijon mustard |
2 clove(s) garlic, minced |
20 grape tomatoes, halved |
1 pound(s) haddock, cut into (4) 1/2 thick pieces |
2 tablespoon(s) olive oil |
1 shallot, chopped |
4 cup(s) spinach, trimmed |
2 tablespoon(s) white wine vinegar |
Directions:
1. preheat oven to 375. 2. place 1 cup spinach in center of each of 4 (18" long sheets ) heavy duty aluminum foil. Place fish on spinach. 3. whisk together mustard, olive oil, vinegar, and garlic. Drizzle evenly over fish. Sprinkle with shallots and black pepper. Top evenly with tomatoes. 4. Bring up foil sides; Double fold top and ends to seal each packet, leaving room for heat circulation inside. Place foil packets in single layer on baking sheet. 5. Bake 15 minutes or until fish is opaque and flakes easily with a fork. cut slits in foil with sharp knife to release steam before opening each packet. |
