It’s Monday and today is the first in a new weekly blog post series called “Focus on Food” here at Laurel on Health Food. Each week on Monday I’ll feature one healthy whole food with fun facts, some nutritional knowledge, and some tips for how to eat them. I hope you enjoy it! Today’s feature: blackberries.
Ingredients:
1/2 cup fresh blackberries
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon agave nectar
1 pinch salt & pepper
Directions:
1. Add all the ingredients to a food processor or blender and blend on high until smooth. Pour dressing through a fine-mesh strainer or cheesecloth to remove the blackberry seeds. Spoon over salads and reserve leftovers in the refrigerator for up to 1 week.
