I have started making focaccia with different things on top, but I like the onions best. Ingredients:
3 cups flour |
1 pkg dried fast action yeast |
1 tsp salt |
pinch of sugar |
5 tbsp olive oil |
1 medium onion, sliced very thinly and cut into short lengths |
1/2 tsp fresh thyme leaves |
coarse sea salt |
Directions:
1. place flour, yeast, salt and sugar ina bowl. Make a well in the center and pour in 1 cup lukewarm water and 1 tbsp of oil. Mix to a dough and knead on a floured surface until smooth and elastic. 2. Place the dough in a large oiled bowl, cover with plastic wrap and leave in a warm place until doubled in size. Knead the dough for 3-4 minutes. 3. after punching the dough down, knead it for 3=4 minutes. brush a large shallow baking pan with about 1 tbsp oil. Place dough in pan, and use fingers to press it into an even layer 1 inch thick. cover dough with a clean cloth, and leave to rise in warm place for 30 minutes. 4. Preheat oven to 400 degrees during this time. 5. While focaccia is rising, heat 3 tbsp of oil in fry pan. add onion and cook over low heat until soft. Stir in thyme. 6. Just before baking, use your fingers to press rows of indentations into the surface of the focaccia. Lightly brush with remaining oil. 7. Spread onion over top and sprinkle lightly with sea salt. 8. Bake 25 miinutees, or until golden. 9. cut into squares and serve warm |
