Focaccia Topped With Tomato & Mushrooms |

A new twist on a classic focaccia appetizer. It has all the ingredients that scream Italian all the way. Very simple & quick! Perfect for a dinner party or a weekend treat for the family. Ingredients:
1 tablespoon olive oil |
6 ounces button mushrooms or 6 ounces cremini mushrooms, sliced |
1 garlic clove, minced |
1 (10 -12 inch) focaccia bread (16 oz) |
1 cup reduced-fat mozzarella cheese, shredded |
8 ounces diced tomatoes |
2 -3 tablespoons fresh basil leaves, chopped |
Directions:
1. Heat oven to 350°F. 2. In an 8 skillet, heat oil over medium heat. 3. Cook mushrooms in oil until tender. 4. Add garlic and cook for about 1 minute or less. 5. Crain if necessary. 6. Place bread on cookie sheet. 7. Sprinkle 3/4 cup of cheese on bread. 8. Top with mushrooms, garlic, and tomatoes. 9. Sprinkle with remaining 1/4 cup cheese. 10. Bake 15-20 minutes or until cheese is melted and bread is hot. 11. Sprinkle with basil. |
