1/2 cup mascarpone cheese, room temp |
1/4 cup extra virgin olive oil |
1 teaspoon lemon juice |
1 garlic clove, minced |
1/2 lb lobster meat |
5 italian rolls |
2 tablespoons tarragon, chopped |
2 tablespoons chives, chopped |
Directions:
1. In a medium bowl stir together the mascarpone and evoo until combined and smooth. stir in herbs, lemon juice, garlic, salt and pepper. 2. cut the lobster meat into nice big chunks. 3. add the lobster to the herb sauce and toss to coat. divide the lobster mixture among the rolls and serve immediatly. |
