Fluffy Stuffed Sweet Potatoes |

Southern Living; family favorite Ingredients:
4 medium sweet potatoes |
1/2 cup marshmallow cream |
1/4 cup melted margarine |
1 tablespoon brown sugar |
1/2 teaspoon salt |
4 large marshmallows, quartered |
Directions:
1. Wash potatoes; place on a greased baking sheet. 2. Bake at 450 degrees for 40 minutes or until tender; allow to cool. 3. Slice skin away from top of each potato. 4. Carefully scoop out pulp, leaving shells intact. 5. Combine pulp, marshmallow cream, margarine, sugar, and salt in a bowl. 6. Beat with electric mixer until light and fluffy. 7. Spoon potato mixture into shells; top each with a quartered marshmallow. 8. Bake at 350 degrees for 20 minutes or until well heated. |
