These are also from Cuba. I like them as a side with of course, melted butter and salt. Ingredients:
1 egg |
1 cup cold water |
1 (3 ounce) package potato pancake mix |
1/4 cup matzo meal |
2 tablespoons melted butter or 2 tablespoons margarine |
1 tablespoon fresh parsley flakes, chopped |
1 -2 tablespoon onion powder |
salt, to taste |
fresh ground black pepper, to taste |
Directions:
1. Beat egg with a fork; blend in the water. 2. Add remaining ingredients, stir, allow to thicken 10 minutes. 3. Form into balls the size of a walnut. 4. Drop into a large pot of rapicly boiling salted water. 5. Cover tightly, reduce heat and simmer for 30 minutes. 6. Drain and serve in soup, stew or as a side dish with meats and poultry. |
