great cake for summer!! No baking involved. Ingredients:
1 (8oz) cream cheese (room temp) |
1 1/2 sticks margarine or butter (room temp) |
3/4 cup sugar |
1 (20oz) can crushed pineapple (drained) |
2 boxes (8 oz each) salerno coconut bar cookies |
2 (8oz each) cool whip |
1 (3 oz ) box strawberry jello |
Directions:
1. Mix jello as directed on box, cool 2. Mix cream cheese, butter and sugar 3. Beat until fluffy 4. Add drained pineapple and fold in 8 oz cool whip 5. Layer bottom of 13x 9 pan with 1 box of cookies 6. Spread 1/2 of the pineapple cheese mixture over cookies 7. Repeat the layers 8. Pour jello over the second cheese layer 9. Refrigerate 8 hours or more until jello set 10. Top with 2nd cool whip 11. Decorate with fresh strawberries and kiwi! 12. ENJOY!!! |
