Often as new bakers, we are astounded as what to TOPPED the dessert before us. So, here's a few ideas for puddings, custards, sponge cakes, and so on. (Betty Crocker)

Directions:
1. Caramel Fluff
2. In chilled bowl, beat 2 cups chilled whipping cream, 3/4 cup brown sugar (packed) and 1 tsp vanilla until stiff.
3. Served on squares of spice or chocolate cake or use to frost a 10 angel food cake. Sprinkle with shaved chocolate. Chill 1 to 2 hours before serving; refrigerate any leftover cake or fluff.

6. Almond Fluff
7. In chilled bowl, beat 2 cups chilled whipping cream until stiff. Gently fold in 1/2 cup white creme de cacao.*
8. Serve on slices of angel food cake. Garnish each serving with 1/2 tsp toasted diced almonds.

10. *Or, if desired, omit creme de cacao; while beating cream, gradually add 1/2 cup instant sweetened chocolate drink (dry).

13. In chilled Bowl, beat 2 cups chilled whipping cream until stiff. Gently fold in 1/3 cup green creme de menthe.*
14. Serve on slices of angel food cake. If desired, garnish each serving with a sprig of mint and a maraschino cherry.
15. *Or, if desired, omit creme de menthe; before beating, add 1/2 teaspoon mint extract, 10 drops green food color and 1/4 cup sugar to the whipping cream.

18. For 1 cup whipped cream:
19. In chilled bowl, beat 1/2 chp chilled whipping cream and 1 tbsp. granulated or confectioners' sugar until stiff.

21. In chilled bowl, beat 3/4 cup chilled whipping cream and 2 tbsp granulated or confectioners' sugar until stiff.
22. For 2 1/3 cups whipped cream:
23. In chilled bowl, beat 1 cup chilled whipping cream and 3 tbsp granulated or confectioners' sugar until stiff.
24. Flavored Whipped Creams:
25. For 1 cup whipping cream, add one of the following during the last minute of beating:
26. 1/2 tsp cinnamon
27. 1/2 tsp nutmeg
28. 1 tsp vanilla
29. 1/2 tsp rum flavoring
30. 1 tsp grated orange peel
31. 1 tsp grated lemon peel
32. 1/2 tsp almond extract
33. 1/2 tsp peppermint extract
34. 1/4 tsp maple flavoring
35. 1/4 tsp ginger
