Another just-in-time recipe. I ttook everything in the kitchen and threw it in a pot, with stunning results. Watch the water level carefully Ingredients:
100 g butter |
3 onions, diced |
4 potatoes, diced |
1 red pepper, skinned and diced |
3 cups rice |
1 fresh chili pepper, diced |
4 liters water |
1/2 tablespoon paprika |
1 tablespoon salt |
2 garlic cloves, minced |
2 teaspoons turmeric |
2 tablespoons cumin |
2 kg chicken breasts, diced |
300 g cashew nuts |
Directions:
1. Melt butter in a maHOOsive saucepan. 2. Add onions & red pepper and saute until onions are translucent. 3. Add potatoes and stir until well coated in delicious juice. 4. Add 2 litres water and spices. Boil until potatoes are soft. 5. Add other 2 lt. and rice. Cook rice until soft, adding more water if necessary. 6. Once rice is soft, stir in chicken pieces, cashews and chili and cook until chicken is soft. |
