Flounder with Peppers and Green Onions |

Ingredients:
2 teaspoons reduced-calorie margarine |
1/3 cup sliced green onions |
1 teaspoon bottled minced garlic |
1 small red bell pepper, cut into thin strips |
1 pound flounder fillets, cut into 4 pieces |
3 tablespoons dry white wine |
1/2 teaspoon grated lime rind |
2 tablespoons fresh lime juice |
Directions:
1. Melt margarine in a large nonstick skillet over medium-high heat. Add green onions, garlic, and pepper strips; cook 2 minutes, stirring often. 2. Add fish, and cook 2 minutes on each side. Sprinkle wine, lime rind, and lime juice over fish. Cover, reduce heat, and simmer 3 minutes or until fish flakes easily when tested with a fork. Carefully remove fish to a serving platter; top with pepper mixture. |
