Ingredients:
1/4 cup vegetable oil , divided |
1 small onion, chopped |
1 clove garlic, minced |
1 (6-ounce) can tomato paste |
3/4 cup water |
1/2 cup vinegar |
2 tablespoons sugar |
1 tablespoon worcestershire sauce |
1 1/2 teaspoons salt |
1 teaspoon dry mustard |
1/8 teaspoon pepper |
1/8 teaspoon chili powder |
4 whole cloves |
1 bay leaf |
3 drops hot sauce |
5 pounds country-style pork ribs, cut into 6 serving-size pieces |
1 tablespoon salt |
Directions:
1. Heat 1 tablespoon oil in a medium saucepan; add onion and garlic. Cook over low heat until onion is tender. 2. Add next 12 ingredients, stirring well. Bring mixture to a boil. Reduce heat; cover and simmer 1 hour. Remove whole cloves and bay leaf; discard. Set sauce aside. 3. Place ribs, 1 tablespoon salt, and water to cover in a large Dutch oven. Bring to a boil. Reduce heat; cover and simmer 30 minutes or until ribs are tender. Drain. 4. Place ribs on grill over slow coals. Grill 5 minutes on each side. Brush both sides of meat liberally with sauce; grill an additional 5 minutes on each side. Serve remaining sauce with ribs. |
