Got this off the side of a bag of Idaho potatoes years ago and it is a fam favorite! Pretend the spinach in the buttery mashed potatoes make it GOOD for you! Ingredients:
2 pounds potatoes, peeled, cubed, boiled |
8 ounces spinach, washed, deveined, chopped & microwaved |
1 envelope dry vegetable soup mix, pkt (lipton savory herb & garlic) |
1/2 stick butter |
1/2 cup skim milk |
Directions:
1. Put hot cooked potatoes into large mixer bowl and whip along with butter. Add soup mix and milk whip again. Mix in cooked spinach and serve. Yum! |
