This simple soup uses a bean and pasta mix. If you can't find it, use 1-1/2 cups bowtie pasta along with some dried thyme, marjoram, and basil.....hope you enjoy Ingredients:
2 (14 oz.) cans ready to serve vegetable broth |
6 oz. pkg. florentine beans with bow ties or 1-1/2 cups bow tie pasta |
2 carrots, peeled and sliced |
2 onions, chopped |
2 cloves garlic, minced |
14 oz. can diced tomatoes, undrained |
1/8 tsp. white pepper |
6 oz. can crabmeat, drained |
1/2 cup grated parmesan cheese |
Directions:
1. Heat vegetable broth to a boil. Stir in package contents of the bean and pasta mix (or just pasta and your own seasonings, if using that), carrot, onion, garlic, undrained tomatoes, and pepper. Return to a boil. Reduce heat to low; cover and simmer 10 minutes until pasta is tender. Gently stir in crabmeat and heat for another 5 minutes. Top each serving with Parmesan cheese |
