from Ingredients:
1 cup white flour |
1/2 cup whole wheat flour |
1/2 cup flax seed meal (flaxseeds ground in a coffee grinder) |
1/2 cup quick oats |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
2 eggs or 1/2 cup egg substitute |
1 cup low-fat buttermilk |
4 tablespoons honey |
2/3 cup raisins |
Directions:
1. Mix all dry ingredients (except the raisins) in a large bowl. 2. Combine liquid ingredients in a separate bowl. 3. Stir liquid ingredients into the dry ingredients all at once. 4. Add raisins. Stir until thoroughly moistened but lumpy. 5. Fill muffin tins, lined with paper or foil cups, to about 2/3 full. 6. Bake at 400°F for 15 to 20 minutes. |
