A great muffin for breakfast or a snack!! Ingredients:
1 cup cereal, fiber one |
2/3 cup soymilk, vanilla |
1 1/4 cups flour, whole wheat |
1/2 cup flaxseed, ground |
1 apple, chopped |
1/2 cup brown sugar |
1/2 carrot, finely shredded |
1/4 cup coconut, flaked |
2 1/2 tsp baking powder |
2 tsp cinnamon, ground |
1/2 tsp salt |
1/2 cup egg beaters, fat-free |
1 tbsp oil, canola |
1 tsp vanilla |
Directions:
1. Heat Oven to 375. Spray bottoms of baking cups (even if using paper cups). Crush cereal. In large bowl, mix cereal and soymilk, let stand 5 minutes. Stir in remaining ingredients. Divide batter evenly. Bake 22-25 minutes. Immediately remove muffins from pan to cooling rack. Serve warm. |
