Make a big batch to freeze. Pop them into the toaster for a quick breakfast. Substitute Flax oil for the butter if you like. Ingredients:
4 cups quick oats |
4 cups bread flour |
1 cup flax seed meal |
1/2 cup ground pecans |
5 teaspoons baking soda |
3 teaspoons baking powder |
5 teaspoons salt |
1/2 cup sugar |
8 eggs |
8 cups buttermilk |
1/2 cup butter |
1/4 cup flax seed oil |
4 teaspoons vanilla |
Directions:
1. grind oats. 2. grind pecans. 3. sift together all dry ingredients. 4. beat eggs, buttermilk and vanilla then add melted butter & oil. 5. gradually add dry ingredients to just moistened. 6. let mixture set for 15 minutes. 7. bake in waffle iron. |
