I developed these to be hearty, healthful, and delicious. The flaxseed is good for you in all sorts of ways. You may cut the sugar out entirely if you like to increase the healthful apsects of the muffin. Ingredients:
1 cup all-purpose flour |
1/2 cup whole wheat flour |
3/4 cup ground flax seed |
3/4 cup quick oats |
1/2 cup dark brown sugar |
2 teaspoons vanilla sugar |
2 teaspoons baking soda |
1/2 teaspoon salt |
1 teaspoon baking powder |
2 teaspoons cinnamon |
1/4 cup dried cranberries |
1/4 cup golden raisin |
1/8 cup chopped walnuts |
2 eggs, beaten |
3/4 cup applesauce |
3/4 cup milk |
Directions:
1. Preheat oven to 350 degrees. 2. Mix together all dry ingredients, including sugar. 3. Stir in raisins and dried cranberries. 4. Add eggs, applesuace, then milk, stirring just until moistened. Please don't over-mix. 5. Spoon batter into muffin tin, filling each cup 3/4 full. 6. Sprinkle a pinch of chopped walnuts onto top of each muffin. 7. Bake for 20-25 minutes, or until center of muffin top is no longer gooey. |
