For those low-carb or gluten free! It's a recipe I developed based on the Muffin in a Minute recipes on so many low carb sites. Ingredients:
4 tablespoons butter, melted |
6 eggs |
1 1/2 cups ground flax seeds |
1/2 cup splenda granular |
2 teaspoons baking powder |
2 teaspoons vanilla |
1 cup blueberries |
Directions:
1. Whisk eggs with butter. Stir in remaining ingredients. Pour into greased muffin tin. Bake in 400 degree oven for 15-17 minutes. |
