Most of roasted stuffs are dry and bland and need sme sauce to go with .... So , I wanted to try smething new .... smething juicy , more flavoured . Ingredients:
chicken with skin 1.2 kg |

olive margarine 1 tbsp |
meat masala pwd 1 tsp |
chilli pwd 1 tsp |
sour cream 1 tsp |
salt |
b ) |
2 tsp olive margarine |
2 lemon grass sliced thinly |
mint leaf 10 |
c ) |
ginger - garlic juice |
2 tbspolive oil |
3 thai lemon squeezed |
pepper pwd 1 tsp |
d ) |
2 kaffir lime leaves pinched |
2 red onions quartered |
1 medium potato cubed |
1 red capsicum chopped |
3 green chillies slit lengthwise |
Directions:
1. Rub A) on the chicken . 2. Pre heat oven to 220 deg 3. Grease the roast pan with 2 tsp margarine 4. Sprinkle lemon grass . 5. push the mint leaves under the skin and 6. Put the chicken on the pan . 7. Drizzle C ) over it 8. Put the D ) around 9. Bake for an hour or until the water run clears when pierced . 10. cover with aluminium foil . let it stand 10 mins . Now carve . |
