Flat Rice (Poha) Veggie Pilaf |

Delicious, fast and easy! Ingredients:
4 cups poha, thick |
1/2 cup cashew pieces |
1/2 cup bell pepper, any colors |
1 cup cilantro, chopped |
2 tablespoons gingerroot, grated |
1/4 teaspoon turmeric |
1/4 teaspoon hing |
2 teaspoons sugar |
6 -8 tablespoons oil |
salt |
1 large potato, cubed |
1/4 cup raisins (optional) |
1/2 cup frozen green pea |
4 tablespoons lemon juice |
1 tablespoon jalapeno, diced |
1/2 teaspoon mustard seeds |
1/2 teaspoon cumin seed |
1 tablespoon coriander powder |
3 curry leaves |
1 1/4 cups water |
Directions:
1. Wash and drain rice. 2. Combine rice in bowl with 1/4 c water and soak 15 minutes. 3. Heat oil in a wok. 4. Add mustard seeds. 5. When they crackle, add cashews, raisins, hing, curry leaves, and all dry spices. 6. Stir to combine. 7. Add all vegetables, ginger, jalapeno, and cumin seeds. 8. Add 1 c water and cover. 9. Cook over medium heat until potatoes are done. 10. Add flat rice, cilantro, salt, sugar, and lemon juice. 11. Stir and serve hot with any green chutney. |
