Flat Iron Steak And Spinach Salad |

I love steak salads and this one sounded so good. From . I can't wait to try this! Ingredients:
2 pounds flat iron steak |
salt and pepper to taste |
2 tablespoons olive oil |
1 large red onion, thinly sliced |
1/2 cup of you favorite italian salad dressing |
3 red bell peppers, cut into 1/2 inch strips |
2 portobello mushrooms, sliced |
1/2 cup red wine |
4 cups baby spinach leaves |
1/2 cup crumbled blue cheese |
Directions:
1. Preheat an outdoor grill for medium high heat (Since I don't have an outdoor grill, I would most likely use my George Foreman) 2. Season the steak with salt and pepper, and cook to desired doneness, about 5 minutes per side for medium-rare 3. Let rest while preparing the rest of the salad 4. Heat olive oil in a large skillet over medium-high heat 5. Stir in onion and cook until it begins to soften, about 4 minutes 6. Pour in the italian dressing and bring to a boil, then stir in the red peppers and mushrooms 7. Reduce heat to medium and cook about 5 minutes 8. Remove the vegies with a slotted spoon, and set aside 9. Increase the heat to medium-high and add the wine 10. Simmer until it has reduced to a syrupy sauce, about 5 minutes 11. Meanwhile, divide the spinach onto 6 plates 12. Thinly slice the steak across the grain 13. Spoon the warm, cooked vegies over the spinach, then place the sliced steak on top 14. Spoon on the reduced red wine sauce, and sprinkle with blue cheese. 15. Some of the reviews on this recipe said that there wasn't enough salad dressing left in the pan, so you might want to double that part. |
