My grandmothers recipe. Love the creamy vanilla pudding like filling. Ingredients:
7 double graham wafers, rolled fine |
1 1/2 cups sugar |
1/4 cup melted margarine |
1/2 teaspoon cinnamon |
2 cups milk |
2 egg yolks (save whites for topping) |
2 tablespoons cornstarch |
1/4 cup sugar |
1 teaspoon vanilla |
2 egg whites |
3 tablespoons icing sugar |
Directions:
1. Mix all crust ingredients together. 2. Press into pie plate, reserving 1/4 of crumbs to sprinkle on top. 3. Combine filling ingredients in a pot. 4. Cook on medium heat until thick. 5. Spread on crust while hot. 6. Beat egg whites until stiff. 7. Beat in icing sugar. 8. Spread on top of filling. 9. Sprinkle with remaining crumbs. 10. Bake at 250 for 20 minutes. |
