Welcome to the Dense-Free Pancake Zone here at Recipezaar. These pancakes are not diet friendly but they are light, small, airy and delicious; not a heavy pancake. You'll notice, too that the directions have several DO NOTS-please heed those warnings. Serve with your favorite toppings. My original source is unknown as my brother sent me the recipe by e-mail over five years ago. Ingredients:
3 eggs |
1 cup heavy cream |
1 cup sour cream |
1/3 cup buttermilk |
1/2 teaspoon vanilla extract (my addition) |
2 tablespoons sugar |
1 teaspoon salt |
2 teaspoons baking powder |
1 teaspoon baking soda |
1 cup unbleached white flour |
Directions:
1. Beat eggs by hand mixer for 2 minutes. 2. Fold in the heavy cream, sour cream, buttermilk and vanilla extract. 3. Sift together the dry ingredients, stir into the egg mixture {just} until smooth. DO NOT overstir or the pancakes will turn out tough! 4. Measure out 2 tablespoons of the batter using a greased measuring spoon. Cook the pancakes on a lighlty greased and heated non-stick pan over MEDIUM heat for at least 2-3 minutes, depending on the stove. Do not cook the pancakes any higher than medium or they will burn! 5. Very carefully flip pancakes over and cook on other side until golden brown. Do not crowd. Their texture is very delicate and can burn easily. 6. Keep pancakes on warming platter until ready to serve. 7. About twenty-five 3 diameter pancakes. |
