This is a yummy marinade that would be equally terrific on chicken or pork tenderloin. Ingredients:
1 1/2 lbs flank steaks |
1 tablespoon white peppercorns |
1 tablespoon black peppercorns |
1 tablespoon mustard seeds |
1 tablespoon five-spice powder |
1 teaspoon star anise, crushed |
1 teaspoon wasabi powder |
4 teaspoons water |
1/4 cup sake |
1/4 cup soy sauce |
1/4 cup mirin |
Directions:
1. Combine peppers, mustard, five spice powder, and anise in a spice mill. 2. Grind to a coarse powder. 3. In a small bowl, stir the water into the wasabi until smooth, adding a few drops of water if necessary. 4. Let stand uncovered for 15 minutes. 5. Combine the spice mix, wasabi, sake, soy sauce, and mirin. 6. Makes about 1 cup marinade. 7. Score flank steak on both sides and place in a large freezer bag. 8. Pour enough of the marinade over the flank steak to coat. 9. Refrigerate overnight. 10. Grill, brushing with additional marinade as the flank cooks. |
