Flank Steak With Peppers and Soy Sauce |

Healthy, inexpensive meal that's easy to make. Ingredients:
4 cups cooked rice (i use instant rice, white or brown) |
4 teaspoons canola oil |
1 1/4 lbs flank steaks, thinly sliced |
4 large assorted bell peppers (any color) |
1 large onion, sliced into half moons |
4 garlic cloves, sliced |
5 tablespoons low sodium soy sauce |
Directions:
1. Cook rice according to directions, when finished put in a casserole dish. 2. Heat 2 teaspoons canola oil in large skillet over medium-high heat. 3. Add beef and cook until browned. 4. Drain meat and transfer to casserole dish, lying over the rice. 5. Heat 2 teaspoons canola oil in same skillet. 6. Add peppers, onion and garlic and cook until peppers and onion is soft. 7. Transfer to casserole dish, lying over the meat. 8. Drizzle with soy sauce, can adjust amount if needed. 9. If necessary, you can put the casserole dish in oven on 200 to keep warm until ready to serve. 10. Salt and pepper to taste. |
