Flank Steak With Fennel Stuffing |

A newtuffed Flank Steak with fennel root, green pepper and pimento, and slivers of capicola Italian sausage. It has a nice zip. I just made it up from what was in the fridge and the pantry today. Well worth keeping these ingredients stocked. Ingredients:
1 (2 lb) flank steaks, pounded to double the size (2 #) |
2 garlic cloves, diced |
1/2 fennel bulb, diced |
1 (2 ounce) jar pimientos, chopped fine |
1/2 green pepper, diced |
7 -8 slices capicola, sausage, slivered |
1 slice bread, crumbed (i only have homemade bread around) |
salt |
fresh ground pepper |
Directions:
1. Pound the steak to tenderize and make it twice the size. 2. Dice all the rest of the veggies and combine with the slivered sausage, the bread crumbs, and the seasonings. Spread over the steak, roll it up and fasten it with a few skewers. Place seam side down on baking sheet, season with a bit more salt, and fresh ground pepper . Place in oven at 350 degrees. |
