FLAMING CHEESE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wiggins Estate in Caddo Mills, Texas in 1983. Ingredients:
1 pound mozzarella cheese |
2 tablespoons butter melted |
2 tablespoons brandy |
1/2 lemon |
Directions:
1. Heat oven to broil then have serving tray ready with crackers, lemon and brandy. 2. Cut cheese into 3 wedges and arrange in star shape in pie pan suitable for broiling and serving. 3. Pour melted butter over cheese then broil 6” from heat until cheese is bubbly and light brown. 4. Add to serving tray then pour slightly warmed brandy over cheese and ignite immediately. 5. Squeeze lemon juice over cheese to extinguish flame then serve at once with firm crackers. |
