Fix Ahead Mashed Potatoes Casserole |

My cousin shared this recipe with me. Great side dish when having guests and goes well with any menu. May be refrigerated and baked later. Ingredients:
5 medium white potatoes |
1/2 teaspoon salt |
2 tablespoons butter |
2 (3 ounce) cream cheese |
2/3 cup sour cream |
1/4 cup milk |
3/4 teaspoon salt |
1 tablespoon butter, melted |
1/2 teaspoon paprika |
Directions:
1. Slice potatoes thin. Boil in water using 1/2 teaspoon salt until tender. Drain and mash. (May use electric mixer). 2. Add butter, cream cheese, sour cream, milk and salt. Mix well. 3. Place mixture in a greased 2 quart casserole dish. Brush top with melted butter and sprinkle with paprika. 4. Bake or refrigerate. If refrigerated, let stand 30 minutes before baking in a 350 degree oven for 30 minutes. (Last 5 minutes of baking time may sprinkle 1/2 cup of shredded cheddar cheese on top.). |
