Secret Agent at recipezaar contends that if your favorite roadkill is not available you can substitute a pork roast. Ingredients:
5 pounds possum, removed from your high beams, skinned and dressed or pork roast |
1 large onion, sliced |
1 fennel bulb, sliced |
2 garlic cloves, quartered and stuffed into possum |
5 pounds fingerling potatoes |
4 carrots, chunked |
4 celery ribs, chunked |
salt and pepper to taste |
1 bouquet garni |
1 1/4 ounces onion soup mix |
3 cups water |
Directions:
1. Place all ingredients into a crockpot. 2. Set crockpot on high heat. 3. Cook for 5 hours on high heat and then 5 additional hours on low heat. 4. Serve with biscuits or cornbread. |
